Ingredients:
For the chicken:
2 boneless, skinless chicken breasts, cubed
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
Salt and pepper to taste
For the creamy tomato sauce:
1/2 cup canned tomato sauce
1/4 cup heavy cream (or coconut milk for a dairy-free version)
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 tsp dried oregano
Salt and pepper to taste
For the spinach:
2 cups fresh spinach, washed
1 tsp olive oil
Salt and pepper to taste
For the rice:
1 cup cooked white or brown rice (or any grain of your choice)
Instructions:
Prepare the chicken:
In a small bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
Rub the seasoning mixture onto the chicken cubes and let them marinate for 15-20 minutes.
Heat a grill pan or skillet over medium-high heat. Grill the chicken for 5-7 minutes per side, or until fully cooked and browned.
Prepare the creamy tomato sauce:
In a saucepan, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for an additional minute until fragrant.
Stir in the tomato sauce, heavy cream, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally. Adjust seasoning to taste.
Prepare the spinach:
In a skillet, heat the olive oil over medium heat. Add the spinach and cook for 2-3 minutes until wilted. Season with salt and pepper.
Assemble the bowl:
Serve the rice as the base in each bowl.
Top with grilled chicken cubes, creamy tomato sauce, and sautéed spinach.
